Require name and email for visitors

I don't know what happened in the last update but it's more confusing to figure out how to change my settings for each gallery and how to ensure visitors sign in with a name and email so I can keep track of who is logging in to view the galleries. Please can you simplify this and explain what each setting means when you hover over.
