Gallery Tracking & Custom Contact Information

Is it possible to customize the information collected from people? Instead of only collecting Name and Email, I’d like to have additional fields. When viewing the list of contacts collected under the People tab, is it possible to also show which gallery the contact was collected from? Currently, I only see Name, Role, and Date Collected.
